Love chocolate? So do we. Eating Lima visits a sho Love chocolate? So do we. Eating Lima visits a shop specialising in Peruvian organic, bean to bar chocolate. AJ, the 
owner, takes us through the process of making fine chocolate. She tells us about the 
regional differences while we nibble on exquisite samples from each area. It’s a tough job!
🦙🦙🦙Cacao is believed to have originated in the tropical Andes foothills in the Amazon. Today 
Peru is known to be the 4th most biologically diverse country in the world and has 6 of the 10 
genetic families of cacao. 
The chocolate we try comes from smallholder farmers and it is AJ’s mission to improve their lot by 
personally promoting their products. She is also assisting in branding and packaging to 
appeal to a modern, western market. 🦙🦙🦙Following the tasting AJ helps each of us find the chocolate with the flavour profile that best
suits our tastes. Peruvian chocolate makes excellent gifts to take home but it’s important to
